In a food processor, grind the nuts until finely ground. Add cacao powder and salt and mix. Do not over-mix, or it will become oily.
Add raisins and vanilla. Then add dates, one at a time while it’s whirring. Continue until the dates are thoroughly mixed in and they have a squishable, brownie-like texture.
Roll into balls. If desired, pour coconut into a small bowl and roll each ball until covered.
